About Author

Rahul Akerkar began his culinary journey as a dishwasher in a small French-style bistro, of which he eventually became sous chef. After that he worked in the kitchens ofseveral leading New York restaurants while pursuing his PhD. After moving back to India, he opened Indigo, his iconic restaurant which drew critical and popular acclaim
